Una de las cosas que nunca falta en nuestra mesa en Navidad son los turrones y las trufas sin nata. Un día, registrando los papeles olvidados en una maleta, encontró el retrato de Freya. Llegó herméticamente cerrada, escondida en una tierra oscura con aspecto generoso y fértil. Las trufas son caras porque son raras, difíciles de recolectar y buscar y también tienen una vida útil más corta. Nuestra presa pertenecía a la más hermosa de las ocho especies conocidas en Papuasia y en la islas vecinas, es decir, a la llamada «gran esmeralda» que es, trufas sin nata además, una de las más raras. La fructificación, que suele ser blanca, grisácea, parda o casi negra, forma una estructura carnosa y fragante que suele tener el tamaño de una bola de golf. La pérdida del sentido del gusto y del olfato puede contribuir a un estado nutricional deficiente, lo que aumenta el riesgo de sufrir enfermedades.
