Aun así me podía la desconfianza, las trufas necesitan terrenos pobres, altitud y mucho frío, no me entraba en la cabeza. Tanto aquellas trufas como las de hoy son saludables, dado que sus ingredientes NO SON ni los típicos que vemos en trufas industriales (grasas hidrogenadas o de palma, azúcar a cascoporro, aditivos…) ni los de las trufas caseras tradicionales (leche condensada, azúcar, nata, mantequilla…). El chef Andrea Tumbarello, conocido como el "el rey de la trufa", es un gran defensor de este hongo y todos los años se queda con el ejemplar más extraordinario de la subasta de la Trufa Negra de Soria, celebrado en Madrid Fusión (en esta edición se ha hecho con un lote de dos trufas de 360 gramos por un precio de 2.500 euros).
